i was suppose to decorate 'em with icing sugar, but erh... i was pressed for time, hence, had to skip the icing...

Recipe:

Ingredients

  • 1/2 cup margarine
  • 1/2 cup fine brown sugar
  • 1/2 caramel syrup
  • 1 egg yolk
  • 2 cups of all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • 1/4 tsp salt
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1 tsp mixed spice powder

Method

  1. Blend margarine with sugar, caramel and egg yolk till smooth.
  2. Add in sifted flour, baking powder, bicarbonate soda followed by the rest of the ingredients and mix into a dough. Refrigerate the dough for an hour.
  3. Preheat oven at 160 degrees and line a baking tray with baking paper.
  4. Roll out the chilled dough into 1/4 inch thickness and cut out desired shape with a cookie cutter (e.g. x'mas tree, gingerbread man...etc) and place them on the baking tray.
  5. Bake at 160 degrees for 9 mins, followed by another 2 mins at 170 degrees. Remove cookies from oven and cool them on a cooling rack before serving or decorating with icing sugar.
