Pandan Ice Cream with Azuki Beans~

The part 2 special of the day was a simple crepes party dinner followed by some homemade ice cream for dessert, without the aid of an ice cream maker.

i reduced the sugar and cream content quite a bit, hence, this batch wasn't as creamy and smooth as the previous. Nevertheless, it was sufficiently sweetened and decent enough eat :x

Toppings: Azuki beans, large chocolate chips and blanched almonds.
Recipe:
Ingredients
  • 250 ml Sweetened Non-Diary Whipping Cream
  • 1 Tbs Custard Powder
  • 250 ml Fresh Milk
  • 1 Cup Azuki Beans (from a pre-packed can/boiled with water, sugar and cooled)
  • 1 tsp Pandan Paste
  • 2 tsp Sweetener (Equal brand)

Method

  1. Dissolve custard powder with 2 Tbs of fresh milk. Bring the remaining fresh milk to a boil on medium heat. Remove from heat and pour the dissolved custard into the boiling milk, stirring constantly for about 1 minute, leave it to cool to room temperature.
  2. Add sweetener and pandan paste to whipping cream and whisk (Be careful not to overwhisk).
  3. Fold in the custard-milk mixture and the azuki beans. Pour into a plastic container and refrigerate for at least 4 to 5 hours before serving.
