Oatmeal Cookies~

If you like oats, you might like these...
~*Oatmeal Cookies*~
These cookies are packed with rolled oats~ They're crunchy on the outside and slightly chewy on the inside~

Recipe (Adapted with modifications from Allrecipes - Kristen's awesome oatmeal cookies)

Ingredients

  • 1 Cup Plain flour
  • 1 tsp Salt
  • 1/2 tsp Bicarbonate soda
  • 3 tsp Cinnamon powder
  • 2 Tbs Shortening
  • 1 Tbs Peanut butter
  • 1 Cup Brown sugar (packed)
  • 2 Tbs Castor sugar
  • 1 tsp Vanilla extract
  • 1 medium Egg
  • 60 ml Water
  • 3 Cups Rolled oats

Method

  1. Preheat oven at 180 degree celsius.
  2. Sift the flour, salt, cinnamon powder and bicarbonate soda into a bowl and mix well.
  3. In a separate bowl, cream the shortening, peanut butter and sugar together.
  4. Add in the vanilla extract, water and egg, followed by the flour mixture and mix well to form a smooth batter.
  5. Mix in the rolled oats. And drop teaspoon full of the batter onto a baking tray lined with greaseproof paper.
  6. Bake at 180 degree celsius for 12 to 15 minutes.
  7. Leave it to cool on a wire rack to cool before storing in an airtight container. Enjoy~
