~*Oatmeal Cookies*~
These cookies are packed with rolled oats~ They're crunchy on the outside and slightly chewy on the inside~
Recipe (Adapted with modifications from Allrecipes - Kristen's awesome oatmeal cookies)
Ingredients
- 1 Cup Plain flour
- 1 tsp Salt
- 1/2 tsp Bicarbonate soda
- 3 tsp Cinnamon powder
- 2 Tbs Shortening
- 1 Tbs Peanut butter
- 1 Cup Brown sugar (packed)
- 2 Tbs Castor sugar
- 1 tsp Vanilla extract
- 1 medium Egg
- 60 ml Water
- 3 Cups Rolled oats
Method
- Preheat oven at 180 degree celsius.
- Sift the flour, salt, cinnamon powder and bicarbonate soda into a bowl and mix well.
- In a separate bowl, cream the shortening, peanut butter and sugar together.
- Add in the vanilla extract, water and egg, followed by the flour mixture and mix well to form a smooth batter.
- Mix in the rolled oats. And drop teaspoon full of the batter onto a baking tray lined with greaseproof paper.
- Bake at 180 degree celsius for 12 to 15 minutes.
- Leave it to cool on a wire rack to cool before storing in an airtight container. Enjoy~
