Pistachio & Cranberry Biscotti~

Biscotti's really fast and easy to bake ya. And the best thing is, you can throw in any favourite nuts, chocolate chips or dried fruits (e.g. raisins, cranberries, apricots...etc).

Recipe:

Ingredients

  • 1 cup self rising flour
  • 1/4 teaspoon salt
  • 1 teaspoon grounded cinnamon spice
  • 1 large egg
  • 1 tablespoon vodka
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 1/3 cup dried cranberries
  • 1/3 cup pistachios

Method

  1. Preheat oven at 170 degrees. Line a baking tray with baking sheet.
  2. Beat egg and sugar till creamy (~2.5 mins). Blend in the vodka and vanilla extract.
  3. Add in sifted self rising flour, salt and cinnamon spice and mix well.
  4. Add in dried cranberries and pistachios and stir well to mix.
  5. Transfer dough onto baking sheet, shape dough into 11 -inch-long, 2 1/2-inch-wide log.
  6. Bake log for 15 minutes or just firm to touch. Cool logs on sheet on rack for 15 minutes. Maintain oven temperature.
  7. Using serrated knife, cut logs on the diagonal into 1/3-inch-wide slices. Arrange slices, cut side down, on the same baking sheet. Bake for 9 minutes. Turn biscotti over, bake for another 8 minutes. Transfer to rack and cool. Enjoy~
